Facebook Cookalong numero 3!! We’ve been having very nice weather the last couple of weeks so a really light and summery pasta for you today. As usual it’s very simple, I got my hands on some baby courgettes in Superquinn which are really nice with lots more flavour than the usual dark green ones we get in the supermarkets here. If you can’t get your hands on the baby variety the regular Spanish courgettes in Lidl are quite good too. The lighter the colour the better the courgette so seek out the lighter green colour….

what you need for 4 according to the Silver Spoon but does 2 in our house:

25g butter
2 tbsp olive oil
1 small onion chopped
6 baby courgettes or 1 large courgette chopped

350g fusilli or penne
1 egg yolk
40g pecorino or parmesan cheese grated
salt and pepper

what to do:

bring a pot of water to the boil for your pasta and in a pan melt the butter and oil and add your onions and cook until soft but not coloured…

add your courgettes, season and cook for about 15 -20 mins until soft…

add salt and pasta to your water and cook until al dente…

remove your courgettes from the heat, add your egg yolk and mix together…

drain your pasta and add to your pan with half the pecorino…

serve with the remaining pecorino on top…
