I’m not going to give you a recipe today as I don’t know the exact amounts so I’ll just give you a link instead which is more or less the same way we do them. I use sparkling water instead of regualr water as it makes the batter lighter. I love courgette chips, to be honest I would just eat a whole bowl of them on their own. I am banished from the kitchen when Bru is making them as I end up eating each one as it leaves the pan, we normally serve the courgettes with a simple steak and it makes for a very tasty dinner. They do take a while to make so be warned:)

I wanted to ask something. I haven’t noticed any posts about espresso. I have been led to believe Italians are passionate about espresso. As I love anything plant-related, I am interested in coffee. It would be interesting to read about what sort of beans you use, whether you use a widely available brand of roasted & vac sealed beans or you have a local specialist roaster who supplies freshly roasted beans to you. Or even if you roast them yourself. Also what type of grinder you use, what machine and why you chose these particular items of equipment over any others. And any info on your technique of extracting the coffeeee….
Myself, being a pauper with very little cash to splash, I just use pre-ground vac sealed coffee from Aldi and put it through an Aerobie Aeropress… There is a coffee roaster nearby though (about 8 miles away) and I want to get a decent manual grinder, so it might be possible to get half-decent coffee at home one day…

I swear by the pods at home, you will find one in every Italian household as they go to the “bar” for their fresh bean coffee. We use an Italian brand in the shop, there is a local roaster but people expect Italian coffee in an Italian deli so it’s not really an option! I really don’t know enough about the science of coffee but I hope to go on a course in Dublin soon. Here’s a blog which you might find interesting
