So I’m just back from a whirlwind couple of days eating & drinking myself stupid around London, we went over on some research for our new product development & branding! We went to so many places I earned  the Overshare Badge on Foursquare for checking into 10+ places in 2 days. The highlight of the trip is that we got to meet Gennaro Contaldo at Jamie’s Italian in Covent Garden, he was an absolute gent, took a photo with us and then sat down at our table for a chat for about 20 mins, he was so nice & down to earth telling us about his upcoming TV show with Antonio Carluccio called “Two Greedy Italians”.  I’ll do a post on where we ate again, I love London, there is so much choice of places to eat, we didn’t have enough time so we’ve decided we need to go back more often for research purposes of course;)

This is my latest Facebook Cookalong recipe, VERY simple and quick to make and is a great recipe for having friends around for dinner….

what you need: 

2 salmon fillets

3 leeks

1 shallot or 1/2 small onion

150g mascarpone cheese

zest of 1/2 lemon

1 egg

2 sheets of puff pastry

sea salt & black pepper

1 tbsp olive oil

20g butter

what to do:

pre-heat your oven to 200 degrees

heat a tbsp of olive oil and melt your butter in a pan…

add your onions and cook over a low heat for about 8-10 mins until soft but not coloured…

add your chopped leeks & 2 tbsp water, season and cook over a low heat for about 15-20 mins until soft…

add your lemon zest to your mascarpone and season…

throw a little bit of flour on your counter, you can roll out your pastry a little but with the new Jus roll sheets you don’t even need to…

once your leeks are cooked transfer to a bowl and leave to cool…

once cooled add your mascarpone mix…

place your salmon on your pastry sheet and season well…

place your leek & mascarpone mix on top…

brush some beaten egg around the edges so the sides will seal…

fold over your pastry and cut away excess, leave in a square or cut into a more rounded shape, whatever is easiest! It doesn’t have to be perfect so don’t worry about it…

press down the edges with a fork…

egg wash the whole outside and place on a greased(rub the tray with some butter) baking tray…

Cook for around 20 mins until pastry has risen and is nice and golden…

Serve and enjoy:)
