I can’t wait for Christmas this year, we’re closed for a week so it will be so nice to just relax and this will be the last time we close at Christmas as we will be doing the renovations in January so we will probably open next year. Everything is going well, the finished plan is nearly done, we’re just trying to allocate space for a convenience “grab and go” fridge which will reduce the waiting time at lunch time. We basically have to change the whole place around just to get access to a toilet but it will be a lot more workable for both the kitchen and the front so we’re all very excited. We originally thought we might have to close for 2 weeks but a lot of work can be done in the background so it will probably be closed for just a couple of days now which is great, it takes a bit of the pressure off financially.

The princess is a lot more aware of Christmas this year and is singing “Jingel bess” all day long, we have a Disney Christmas CD in the car which is never turned off, I haven’t listened to the radio in 2 weeks but I nearly know the words of Frosty the snowman off by heart, this was one song where I could never get past the first line. My sister is also coming home with her new baby who I haven’t seen yet so I could be getting all broody in the new year;), as Bru exists the sitting room rather quickly:) We’re going to the MIL’s on Christmas eve for the fish feast and then for dinner on Christmas day, I might try and take a few pics this year.

A very simple pasta on the menu today, excuse some of the photos but it was dark here by 4pm today as the weather was so bad so there was very little natural light in my kitchen all day. This one really is so simple and takes no time at all and if you’re like me and LOVE spring onions this recipe is for you.

what you need for 2:

 – 5/6 spring onions

 – 250g diced pancetta

 – 20g butter

 – 350g penne

 – olive oil

 – sea salt and black pepper

 – grated Parmesan cheese

what to do:

chop your spring onion very finely:

bring a pot of water to the boil, heat some olive oil in a pan and cook your pancetta until slightly cooked:

add some salt to your boiling water and cook your pasta until al dente:

add your chopped spring onion to the pan and cook for 2-3 mins:

add your butter to your pan and heat until melted, drain your pasta once cooked:

add your bacon mix, parmesan and black pepper to your pasta, add a little extra oil if a bit dry.
